Graham Cracker Chocolate Chip Ice Cream

Ingredients

  • 1/2 cup brown sugar
  • 1 Tbsp honey
  • 6 graham crackers, crushed
  • 1/4 tsp salt
  • 1 1/2 cups whipping cream, divided
  • 1 1/2 cups milk
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips

Instructions

  • In a medium saucepan over medium heat, heat the sugar, honey, graham crackers, salt and 1 cup whipping cream. Cook until sugar has melted.
  • Stir in the milk, vanilla and remaining 1/2 cup of whipping cream. Cover, and place in the refrigerator for at least 3 hours.
  • Pour the mixture into your ice cream maker, and process according to manufacturer’s instructions, adding the chocolate chips when the ice cream has thickened.
  • When the ice cream is done, pour into an airtight container, and freeze until ready to serve.
