In a medium bowl, mix together the flour, brown sugar, baking powder, cinnamon and nutmeg.
In a small bowl, mix together the milk, egg, butter and vanilla extract until fully combined.
Add in the wet ingredients to the dry ingredients, and mix until just combined. Fold in the apples.
Heat some oil on a skillet. Using a 1/3 cup measure, scoop batter onto the warm skillet. Cook for 1-2 minutes until small bubbles form on the surface, then flip and cook the other side for 1 minutes.
Transfer the pancake to a plate, and repeat the process for the remaining batter.
