Easy Strawberry Cake
This easy strawberry cake recipe is perfect to use up any strawberries you have in your fridge. A great breakfast or dessert idea.

- 6 Tbsp salted butter, softened
- 18 Tbsp granulated sugar
- 1 large egg
- 1/2 cup milk of choice
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 lb strawberries, hulled and halved
Preheat the oven to 350°F. Lightly spray an 8 inch cake round cake pan. Set aside.
In a large bowl, cream together the butter and 1 cup of white sugar until light and fluffy. Add in the egg, milk and vanilla, and mix until fully combined.
Add in the flour and baking powder, and mix in until just combined.
Pour in the batter into the prepared cake pan. Arrange the strawberries on top of the batter cut side down as close to possible. Sprinkle the remaining 2 Tablespoon sugar over the berries.
Bake in the preheated oven for 10 minutes. Reduce the temperature to 325°F, and bake for an additional 1 hour, or until a toothpick inserted comes out clean. Remove from oven and allow to cool on a wire rack.
