Ginger Pear Baked Oatmeal

Even oatmeal haters will love this ginger pear baked oatmeal. Easy to make and a perfect recipe for fall.

Ingredients

  • 3 cups quick oats
  • 2/3 cup brown sugar
  • 1/3 cup whole wheat flour
  • 1 tsp ground ginger
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 large eggs
  • 1/4 cup canola oil (or vegetable oil)
  • 1 tsp vanilla extract
  • 2 medium pears, diced

Instructions

  • Preheat the oven to 350˚F. Lightly grease a 9×13 inch baking dish and set aside.
  • In a medium bowl, whisk together all of the ingredients, except the pears. Gently fold in the diced pears and pour into the prepared baking dish.
  • Bake in the preheated oven for 25-30 minutes, or until set in the middle.
