Ritz and Chocolate Ice Cream Sandwiches

Simple Ritz and Chocolate Ice Cream Sandwiches made with only 3 ingredients. The sweet and salty dessert of your dreams.

Ingredients

  • 1 box Ritz crackers
  • 1 tub ice cream of choice (I used cherry)
  • 1 cup chocolate chips

Instructions

  • Line a baking sheet with parchment paper. Set aside.
  • Use a Medium Cookie Scoop to scoop the ice cream on the a Ritz cracker, and press another one on top. Place on the baking sheet and repeat with the remaining crackers. Place in the freezer while you do the next step.
  • Place the chocolate chips in a small, microwave safe bowl. Heat in the microwave for 30 second intervals, removing to stir every 30 seconds until chocolate is completely smooth.
  • Remove the Ritz sandwiches from the freezer and either dip or drizzle the chocolate on the ice cream sandwiches. Return to the freezer, and freeze until the chocolate has hardened.
  • Store in an airtight container.
