Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 cup applesauce
  • 1/2 cup brown sugar
  • 1/4 cup baking stevia
  • 1/3 cup crunchy peanut butter
  • 1 Tbsp honey
  • 2 tsp vanilla extract
  • 1 large egg
  • 1 large ripe banana, mashed
  • 2 1/4 cups old fashioned oats

Instructions

  • Preheat the oven to 350℉. Line a baking sheet with parchment paper and set aside.
  • In a medium bowl, mix together the flour, baking soda, salt and cinnamon. Set aside.
  • In the bowl of.a stand mixer, cream together the applesauce, brown sugar and stevia until smooth. Mix in the peanut butter, honey, vanilla and egg until fully combined.
  • Slowly mix the dry ingredients into the wet ingredients until fully incorporated. Fold in the oats.
  • Using a medium cookie scoop, scoop the cooke dough onto the prepared baking sheet and bake in the preheated oven for 12-15 minutes, or until golden. Allow to cool on the baking sheet for 3 minutes before transferring to wire racks to cool completely.
