Peanut Butter Chip Cold Brew Muffins
Easy Peanut Butter Chip Cold Brew Muffins recipe. A great way to use up extra brewed coffee, they make a great breakfast treat or dessert.

brown sugar,
packed
1/4

cocoa powder

baking soda

cold brew concentrate
(or strong brewed coffee)

oil

apple cider vinegar

peanut butter chips
Instructions
Preheat the oven to 350°F. Line a muffin pan with paper liners and set aside.
In a large bowl, mix together the flour, brown sugar, cocoa powder and baking soda.
In a small bowl, mix together the cold brew, oil and vinegar.
Slowly mix the coffee mixture into the flour mixture until fully combined Fold in the peanut butter chips.
Fill the muffin cups around 3/4 full and bake in the preheated oven for 20-25 minutes, or until a toothpick inserted comes out clean.
Allow to cool in the pan for around 5 minutes before transferring to wire racks to cool completely.
Notes
I use avocado oil in this recipe, but any neutral oil works.
