Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 cups Rice Krispies cereal
  • 1/2 cup vegan salted butter
  • 8 oz vegan cream cheese
  • 1 cup granulated sugar

Instructions

  • Preheat the oven to 350°F. Line a cookie sheet with parchment paper and set aside.
  • In a large bowl, mix together the flour, baking powder, salt and Rice Krispies. Set aside.
  • In the bowl of a stand mixer, cream together the butter, cream cheese and sugar until light and fluffy.
  • Slowly mix in the Rice Krispies mixture.
  • Using a medium cookie scoop, scoop the cookie dough onto the prepared baking sheet. Press the cookie dough onto the prepared baking sheet. Press the cookies down with the bottom of a glass to flatten slightly.
  • Bake in the preheated oven for 8-10 minutes. Allow to cool completely on the cookie sheet.
