Vegan Instant Pot Cauliflower Soup

Ingredients

  • 2 tsp avocado oil
  • 1 medium head cauliflower, chopped
  • 6 cloves garlic, minced
  • 1 medium onion
  • 3/4 cup unsalted, roasted cashews
  • 1 tsp turmeric
  • salt and pepper to taste
  • 5 cups water
  • 1 medium lime

Instructions

  • Saute the oil in the Instant Pot until hot. Add in the cauliflower, garlic, onion, cahswes, turmeric, salt ant pepper. Cook until the onions are fragrant.
  • Pour in the water.
  • Pressure cook for 2 minutes. Do a quick release.
  • Transfer the soup to a blender and blend until smooth.
  • Return the soup to the Instant Pot and saute until it comes to a boil. Squeeze in the lime juice and turn off the heat.
  • Ladle into bowls and enjoy.
