- 2 tsp avocado oil
- 1 medium head cauliflower, chopped
- 6 cloves garlic, minced
- 1 medium onion
- 3/4 cup unsalted, roasted cashews
- 1 tsp turmeric
- salt and pepper to taste
- 5 cups water
- 1 medium lime
Saute the oil in the Instant Pot until hot. Add in the cauliflower, garlic, onion, cahswes, turmeric, salt ant pepper. Cook until the onions are fragrant.
Pour in the water.
Pressure cook for 2 minutes. Do a quick release.
Transfer the soup to a blender and blend until smooth.
Return the soup to the Instant Pot and saute until it comes to a boil. Squeeze in the lime juice and turn off the heat.
Ladle into bowls and enjoy.
