M&M Rice Krispie Cookies

Ingredients

  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup salted butter, softened
  • 1 tsp vanilla extract
  • 2 1/4 cup all-purpose flour
  • 1 cup unsweetened shredded coconut
  • 1 cup Rice Krispies
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup M&Ms

Instructions

  • Preheat the oven to 350°F. Line a cookie sheet with parchment paper and set aside.
  • In the bowl of a stand mixer, cream together the sugars, butter and vanilla until light and fluffy. Mix in the eggs one at a time until fully incorporated.
  • In a separate bowl, mix together the flour, coconut, Rice Krispies, oats, baking powder and salt.
  • Slowly mix in the dry ingredients into the wet ingredients until fully incorporated. Fold in the M&Ms.
  • Using a medium cookie scoop, scoop the batter onto the prepared cookie sheet. Bake in the preheated oven for around 16 minutes. Allow to cool on the pan for around 3 minutes before transferring to wire racks to cook completely.
