Bacon Gnocchi

- 500 g store bought gnocchi
- 12 oz bacon, chopped
- 3 cloves garlic, minced
- 1 tsp cayenne pepper
- 1 (400g) can diced tomatoes
- 1 Tbsp tomato paste
- 3 Tbsp heavy cream
- 1/2 cup mozzarella cheese, shredded
Preheat the oven to 400°F.
Bring a medium saucepan of salted water to a boil. Cook the gnocchi in the boiling water until the gnocchi rises to the surface. Drain and set aside.
Meanwhile, cook the bacon until it starts to crisp. Discard most of the fat, then add in the garlic and cook for around 1 minute.
Add in the cayenne pepper, diced tomatoes and tomato paste. Cook for around 5 minutes. Mix in the heavy cream.
Remove from heat and mix in the gnocchi. Pour the mixture into a 9 inch square baking pan and top with the mozzarella.
Bake in the preheated oven for 10 minutes, or until the mozzarella is melted.
