Gluten Free Oatmeal Banana Bread

Ingredients

  • 2 1/2 cups rolled oats
  • 3 medium ripe bananas
  • 3/4 cup brown sugar
  • 1/2 cup milk of choice
  • 2 large eggs
  • 1/3 cup oil
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 tsp vanilla extract
  • 1 cup rolled oats

Instructions

  • Preheat the oven to 350°F. Lightly spray a loaf pan with cooking spray and line the bottom with parchment paper. Set aside.
  • In a blender, pulse the oats until it turns into a fine powdery flour.
  • Add in the bananas, brown sugar, milk, eggs, oil, baking soda, salt and vanilla extract. Blend until smooth.
  • Add in the 1 cup of rolled oats and pulse 2-3 times. You don't want the oats to be too ground.
  • Pour the batter into the prepared loaf pan and bake in the preheated oven for 65-70 minutes, or until a toothpick inserted into the center comes out clean.

Notes

  1. You can also use oat flour instead of making your own in a blender.
  2. Store in an airtight container in the fridge for up to 7 days.
  3. I use avocado oil, but any neutral oil works.
