Green Oatmeal

Easy Green Oatmeal recipe. A breakfast idea inspired by your favourite smoothie, it also makes a great St Patrick's Day idea.

Ingredients

  • 1 cup oat milk
  • 2 cups baby spinach
  • 1/2 medium banana
  • 1/2 cup rolled oats

Toppings

  • 1/2 medium banana
  • additional fruit

Instructions

  • In a blender, pulse the oat milk, spinach and banana until smooth.
  • Combine the milk mixture and the oats in a small saucepan.
  • Heat the saucepan over medium heat until it begins to simmer. Reduce heat and cook for around 4-5 minutes, stiring continuously until thickened.
  • Pour into a bowl and top with desired toppings. Enjoy!
