Strawberry Pancakes

Ingredients

  • 2/3 cup Greek yogurt
  • 1/3 cup milk of choice
  • 2 tsp baking powder
  • 2 large eggs
  • 1/4 tsp vanilla extract
  • 4 Tbsp salted butter, melted
  • 2 Tbsp granulated sugar
  • 1 cup all-purpose flour
  • 1 cup fresh strawberries, diced

Instructions

  • In a large bowl, mix together the Greek yogurt, milk and baking powder until smooth. Beat in the eggs one at a time until fully incorporated. Mix in the vanilla, butter and sugar.
  • Mix in the flour until just combined. Fold in the strawberries.
  • Heat a medium skillet over medium heat and spray with cooking spray. Scoop 1/4 cup of the batter for each pancake and flip when bubbles are covering the surface of the pancakes. Flip and cook the other side until it is golden. Repeat for the remaining pancakes.

Notes

  1. If you do not finish all of the pancakes, place the leftovers on wire racks to cool then transfer to a freezer bag and place in the freezer. Then you can toast them in your toaster for a quick and easy breakfast.
