Chicken and Rice Soup

Easy Chicken and Rice Soup recipe. The perfect comfort food using leftover rotisserie chicken, this makes a great last minute dinner idea.

Ingredients

  • 2 Tbsp salted butter
  • 2 medium carrots, peeled and diced
  • 2 ribs celery, diced
  • 1 medium onion, diced
  • 1/2 tsp dried thyme
  • salt and pepper to taste
  • 1/2 tsp bay leave pieces
  • 6 cups chicken broth
  • 2/3 cup dry rice
  • 3 cups cooked chicken, shredded
  • 1/2 cup whipping cream
  • 1/2 cup milk
  • 1/4 cup all-purpose flour

Instructions

  • In a large saucepan, heat the butter over high heat until melted. Add in the carrots, celery, onion, thyme, salt, pepper and bay leaves. Cook for around 5 minutes, or until onions are translucent.
  • Mix in the chicken broth and rice, and cook for around 25 minutes. Add in the chicken and cook for around 5 minutes.
  • Meanwhile, in a medium bowl, mix together the whipping cream, milk and flour. Mix into the soup and cook until the soup is thickened. Serve immediately.
