- 1/2 cup coconut milk (from a carton, not a can)
- 1/2 cup water
- 1/2 cup rolled oats
- 1 Tbsp chia seeds
- 1 Tbsp Nutella
Frosting
- 0.5 oz cream cheese
- 0.5 oz salted butter
- 1/3 cup powdered sugar
- 3/4 tsp milk
- 1/4 tsp clear vanilla extract
Heat the milk and water in a small saucepan. Add in the oats and chia seeds. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally. Remove from heat and mix in the Nutella. Set aside.
Meanwhile, in a small bowl, mix together the frosting ingredients until smooth. Set aside.
Pour the oatmeal into a bowl, and top with the frosting.
- This frosting recipe makes quite a lot for one bowl. Save some for later by storing it in an airtight container in the fridge.
