Vegan Cauliflower and Leek Soup

Easy Vegan Cauliflower and Leek Soup recipe. Made with only 7 ingredients, this is a quick and simple weeknight dinner idea.

Ingredients

  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 large leek, chopped (white parts only)
  • 1/4 tsp salt
  • 1 head cauliflower
  • 7 cups vegetable broth
  • 1/4 cup raw cashews, soaked
  • nutmeg, for garnish

Instructions

  • In a large saucepan, heat the oil over medium heat. Cook the garlic, leeks and salt for around 3 minutes. Add in the cauliflower and cook for an additional minute.
  • Mix in the vegetable broth and bring to a boil. Reduce heat and allow to simmer for around 30 minutes, or until the cauliflower is tender.
  • Mix in the cashews and allow the soup to cool slightly. Pour the soup into your blender in batches, and puree until smooth. Return soup to the saucepan and warm over the stove if needed.
  • Ladle into bowls and sprinkle with nutmeg.
