Brownie Mix Buckeye Cookies

Ingredients

  • 1 box family size brownie mix (18.4 oz)
  • 1/4 cup salted butter, melted
  • 4 oz cream cheese, softened
  • 1 large egg
  • 1 cup powdered sugar
  • 1 cup creamy peanut butter
  • 1/2 cup chocolate chips

Instructions

  • Preheat the oven to 350°F. Line a cookie sheet with parchment paper and set aside.
  • In a medium bowl, cream together the brownie mix, butter, cream cheese and egg until fully combined.
  • Scoop the mixture into the prepared cookie sheet and bake in the preheated oven for 12-15 minutes, or until the edges of the cookie are slightly hardened.
  • Meanwhile, in a medium bowl, cream together the powdered sugar and peanut butter until fully combined. Form the mixture into 1 inch balls, making sure you have 1 for every cookie.
  • Once the cookies are cooked, immediately place 1 peanut butter balls on top and press down slightly.
  • Allow to cookies to cool completely.
  • Once the cookies are cooled, melt the chocolate in a microwave safe bowl in the microwave in 30 second intervals, mixing until smooth and melted.
  • Spoon some melted chocolate on top of each cookie, making sure it covers the peanut butter ball. Allow the chocolate to set before storing in an airtight container.
