Mini Peanut Butter Nutella Cups

Ingredients

  • 3/4 cup peanut butter
  • 6 Tbsp coconut oil, divided
  • 3/4 cup Nutella

Instructions

  • Line a mini muffin pan with paper liners. Set aside.
  • In a medium microwave safe bowl, melt the peanut butter and 3 Tbsp coconut oil in 30 second intervals, mixing until smooth.
  • Divide evenly into the prepared muffin pan. Place in the freezer.
  • Meanwhile, melt the Nutella and remaining coconut oil in a microwave safe bowl in 30 second intervals, mixing until smooth. Pour on top of the slightly frozen cookie butter cups. Place in the freezer to harden completely.

Notes

You can melt the Nutella in the same bowl as the peanut butter without washing it. It gives it a slight peanut butter flavour but doesn't discolour the Nutella layer.
