Thin Mint Latte Oatmeal
Easy Thin Mint Latte Oatmeal recipe. This breakfast will remind you of the Dunkin' Donuts latte, it is the perfect way to get your coffee in the morning.

- 1/2 cup strong brewed coffee
- 1/2 cup milk of choice
- 1/2 cup rolled oats
- 1 Tbsp chia seeds
- 1 packet stevia
- 1 drop mint extract
- 1/4 cup vanilla yogurt
- 2 Thin Mint Cookies, chopped
Heat the coffee and milk in a small saucepan. Add in the oats, chia seeds and stevia. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
Remove from heat and mix in the mint extract. Pour the oatmeal into a bowl, and top with the yogurt and chopped cookies.
