Cream of Chicken and Gnocchi Soup

Easy Cream of Chicken and Gnocchi Soup recipe. Tastes like the one from Olive Garden, this homemade version is a lot healthier.

Ingredients

  • 1 Tbsp oil
  • 1 large chicken breast, cubed
  • 1/2 cup salted butter
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 1 medium carrots, peeled and grated
  • 2 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 4 cups chicken broth
  • 3/4 cup half and half
  • 3/4 cup milk
  • 1 (16 oz) package potato gnocchi
  • 1/2 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp ground nutmeg
  • 1 cup baby spinach

Instructions

  • In a large skillet, cook the chicken in the oil until no longer pink. Set aside.
  • In a large saucepan, melt the butter. Cook the onion, celery, carrot and garlic until the onions are transparent.
  • Mix in the flour and cook for around 3-4 minutes. Pour the chicken broth, half and half and milk over the vegetable mixture and cook until the mixture begins to thicken, around 5 minutes. Reduce heat and stir in the gnocchi and chicken. Mix in the rosemary, salt, pepper and nutmeg. Cook until the gnocchi becomes tender, around 8-10 mintues. Stir in the spinach.
