Pumpkin Chocolate Chip Loaf

Ingredients

  • 1 2/3 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground all-spice
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/2 cup salted butter, softened
  • 1 1/3 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1/3 cup water
  • 1 1/4 cup chocolate chips

Instructions

  • Preheat the oven to 350ºF. Lightly grease a loaf pan and set aside.
  • In a large bowl, mix together the flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg. Set aside.
  • In a separate bowl, cream together the butter, sugar and vanilla until light and fluffy. Add the eggs, one at a time, then add the pumpkin and mix until fully combined.
  • Alternately add the dry ingredients and water to the flour mixture until fully incorporated.
  • Fold in 1 cup of the chocolate chips pour the batter into the prepared loaf. Sprinkle the top of the batter with the remaining 1/4 cup of chocolate chips then bake in the preheated oven for 55-65 minutes or until a toothpick inserted comes out clean. Allow to cool in the pan for 10 minutes then transfer to a wire rack to cool completely.
