Funfetti Mug Cake

Easy Funfetti Mug Cake recipe. This tasty dessert idea makes a great last minute treat. No eggs required, this can be made vegan.

Ingredients

Cake

  • 1/4 cup all-purpose flour
  • 1/4 tsp baking soda
  • 2 tsp granulated sugar
  • 3 Tbsp milk of choice
  • 1/2 Tbsp oil
  • 1/4 tsp vanilla extract
  • 1 1/2 tsp sprinkles

Frosting

  • 1 oz cream cheese, softened
  • 1 oz salted butter, softened
  • 3/4 cups powdered sugar
  • 1/2 Tbsp milk of choice
  • 1/4 Tbsp vanilla extract
  • sprinkles

Instructions

  • In a microwave sage mug, mix together all of the cake ingredients except the sprinkles until fully combined. Fold in 1 tsp sprinkles. Sprinkle the rest on top.
  • Microwave for around 1 minute, or until the cake looks done. Allow to cool for around 1 minute.
  • Meanwhile, mix together the frosting ingredients except the sprinkles until smooth. Pipe on top of cooled cake and top with additional sprinkles, if desired.

Notes

  1. The frosting makes quite a lot. You could probably use this amount of frosting for 2 mug cakes.
  2. Make sure your mug is a good size. The cake will expand in the microwave then deflate. If your mug is too small, the cake could overflow.
