Vanilla Bean Latte Oatmeal

- 1/3 cup strong brewed coffee
- 2/3 cup milk of choice
- 1/2 cup old fashioned oats
- 2 tsp maple syrup
- 1 Tbsp chia seeds
- 1/2 tsp vanilla bean paste
- 1/4 cup vanilla yogurt
Heat the coffee and milk in a small saucepan on medium heat. Add in the oats, maple syrup and the chia seeds. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
Remove from heat, and mix in the vanilla bean paste. Pour into a bowl and top with yogurt.
