Nacho Quesadillas
Easy Nacho Quesadillas recipe. The perfect lunch or snack idea to make when you have extra olives that need to be used up.
Servings: 1
- 2 small corn tortilla
- 1/3 cup cheddar cheese, shredded
- 2 Tbsp black olives, sliced
- 2 cherry tomatoes, chopped
- 1/4 cup guacamole
Sprinkle one tortilla with the cheese and top with olives and cherry tomatoes. Top with the second tortilla.
Lightly spray a large skillet with cooking spray. Place the quesadilla on the skillet and cook on medium heat for 2-3 minutes on each side, or until the cheese has melted.
Top with guacamole and enjoy!
