Pistachio Latte Oatmeal

- 2/3 cup strong brewaed coffee
- 1/3 cup milk of choice
- 1/2 cup old fashioned oats
- 1 Tbsp maple syrup
- 1 Tbsp chia seeds
- 1/4 cup yogurt
- 1 Tbsp pistachios, chopped
Heat the coffee and milk in a small saucepan on medium heat. Add in the oats, maple syrup and chia seeds. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
Pour into a bowl, and top with yogurt and pistachios.
