Salmon Pasta in White Wine Sauce

- 1.5 Tbsp olive oil
- 3 medium salmon fillets
- salt and pepper to taste
- 200 g dry spaghetti
- 2 Tbsp avocado oil
- 2 Tbsp ghee
- 4 cloves garlic, minced
- 2 medium green onions, chopped
- 1 cup cherry tomatoes, halved
- 1/4 tsp red pepper flakes
- salt and pepper to taste
- 2 Tbsp lemon juice
- 3/4 cup white wine
Preheat the oven to 450˚F. Line a baking sheet with aluminium foil.
Place the salmon on the baking sheet and brush with olive oil. Sprinkle with salt and pepper.
Bake the salmon in the preheated oven for around 15 minutes until the salmon is cooked through. Remove and set aside.
Meanwhile, cook the pasta in salted water until al dente. Drain and set aside.
In a medium skillet, heat the avocado oil and ghee until the ghee has melted. Add in the garlic and green onions until garlic is fragrant.
Add in the tomatoes, red pepper, salt and pepper. Saute for around 3 minutes.
Add in the lemon juice and wine, and cook until reduced to hald. Add in the cooked salmon and pasta. Cook for around 4 minutes, breaking up the salmon into flakes. Serve immediately.
