Salmon Pasta in White Wine Sauce

Ingredients

  • 1.5 Tbsp olive oil
  • 3 medium salmon fillets
  • salt and pepper to taste
  • 200 g dry spaghetti
  • 2 Tbsp avocado oil
  • 2 Tbsp ghee
  • 4 cloves garlic, minced
  • 2 medium green onions, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 tsp red pepper flakes
  • salt and pepper to taste
  • 2 Tbsp lemon juice
  • 3/4 cup white wine

Instructions

  • Preheat the oven to 450˚F. Line a baking sheet with aluminium foil.
  • Place the salmon on the baking sheet and brush with olive oil. Sprinkle with salt and pepper.
  • Bake the salmon in the preheated oven for around 15 minutes until the salmon is cooked through. Remove and set aside.
  • Meanwhile, cook the pasta in salted water until al dente. Drain and set aside.
  • In a medium skillet, heat the avocado oil and ghee until the ghee has melted. Add in the garlic and green onions until garlic is fragrant.
  • Add in the tomatoes, red pepper, salt and pepper. Saute for around 3 minutes.
  • Add in the lemon juice and wine, and cook until reduced to hald. Add in the cooked salmon and pasta. Cook for around 4 minutes, breaking up the salmon into flakes. Serve immediately.
