Snickerdoodle Pancakes with Cinnamon Glaze

Easy recipe for Snickerdoodle Pancakes with Cinnamon Glaze. Light and fluffy, this is the perfect weekend breakfast idea.

Ingredients

  • 3/4 cup milk
  • 2 Tbsp white vinegar
  • 1 cup all-purpose flour
  • 2 Tbsp granulated sugar
  • 2 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 large egg
  • 2 Tbsp salted butter, melted

Glaze

  • 1 cup powdered sugar
  • 1 tsp vanilla
  • 2 tsp ground cinnamon
  • 2-4 Tbsp milk

Instructions

  • In a medium bowl, combine the milk and the vinegar, and let stand for at least 5 minutes to “sour”
  • In a separate bowl, combine flour, sugar, baking powder, baking soda and salt in a large mixing bowl. Whisk egg and butter into the “soured” milk. Pour the flour mixture into the wet ingredients, and whisk it together until the batter is smooth.
  • Heat a large skillet over medium heat and spray with cooking spray. Scoop 1/4 cup of batter for each pancake, and flip when bubbles are covering the surface of the pancake. Flip and cook the other side until it is golden.
  • Glaze: In a small saucepan, mix together the glaze ingredients on medium heat until melted. Pour over pancakes and enjoy!
