Slow Cooker Sweet Potato Peanut Soup

Easy Vegan Slow Cooker Sweet Potato Peanut Soup recipe. Vegetarian African peanut stew for a comforting weeknight dinner idea.

Ingredients

  • 28 oz can diced tomatoes, drained
  • 1 cup chunky peanut butter
  • 3 cloves garlic
  • 1 Tbsp crushed red pepper flakes
  • 3 1/2 cups sweet potatoes, peeled and cubed
  • 15 oz cooked chickpeas
  • salt & pepper to taste
  • 5 cups vegetable broth
  • 3 cups baby spinach

Instructions

  • In a food processor, pulse the tomatoes, peanut butter and garlic. Transfer to a slow cooker.
  • Add in the sweet potatoes, chickpeas, vegetable broth, crushed red pepper flakes, salt and pepper. Cover and cook on low for 6-8 hours, or until the sweet potatoes are tender.
  • Mix in the spinach and transfer to bowls. Serve with peanuts on top, if desired.
