Lemon Pistachio Muffins

These are the best Lemon Pistachio Muffins I have tried so far! This recipe makes a moist and tender muffin with a light lemon flavour.

Ingredients

Muffins

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs, room temperature
  • 1 cup milk, room temperature
  • 1/2 cup unsalted butter, melted and cooled
  • 1 Tbsp lemon zest
  • 1/4 cup lemon juice
  • 1/2 cup pistachios, roughly chopped

Lemon Glaze (optional)

  • 1 cup powdered sugar
  • 2-3 Tbsp lemon juice
  • 1/4 cup pistachios, roughly chopped

Instructions

Lemon Pistachio Muffins

  • Preheat the oven to 350˚F. Line two muffin pans with liners.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
  • In another large bowl, whisk together the eggs, milk, melted butter, lemon zest, and juice.
  • Stir in the flour mixture until just incorporated. Fold in the pistachios.
  • Evenly divide the batter among the prepared muffin cups.
  • Bake 15 to 20 minutes, until a toothpick inserted in the muffin comes out clean.
  • Let cool completely.

Lemon Glaze

  • Whisk in the sugar and lemon juice until slightly thickened and pourable.
  • Spoon the glaze over the muffins. Sprinkle the pistachios on top.
