Strawberry Pie

The best strawberry pie recipe I have ever made! Fresh strawberry filling on top of flaky pie crust makes the best summer dessert.

It's almost strawberry season, and I can't wait! They are already putting strawberries and other fresh berries on sale at my local grocery store, and I am buying them out! I am already envisioning all of the different strawberry desserts I will be making over the next couple of weeks.

This easy strawberry pie recipe is going to be a staple in my kitchen this year! The fresh strawberry pie filling on top of the golden brown buttery crust makes this the perfect strawberry pie for Spring or Summer. Another perk: if it is too hot, make the pie crust out of graham cracker crumbs to make this a no-bake pie!

My 3 year old toddler has been requesting that I make this pie every week, and honestly, it's hard to say no to that.

Strawberry Pie Ingredients

This fresh strawberry pie recipe is so easy to make. All you need is:

  • frozen pie crust - you can also use a homemade pie crust.
  • fresh strawberries - the strawberry filling will be made with both whole and sliced strawberries.
  • White sugar - this makes up the sweet glaze. There is not really a great substitute for the sugar in this recipe.
  • Cornstarch - this acts as the thickening agent in the strawberry glaze.
  • Cold water - to mix together with the cornstarch.

Tips

Storage: This pie is best enjoyed the day you make it. You can store leftovers loosely covered with plastic wrap in the fridge for up to 3 days, however the bottom of the crust will get soggier the longer you leave it in the fridge. Avoid storing in an airtight container, as this traps moisture, making the flaky crust turn soggy faster. I would not store this pie at room temperature, as the strawberry mixture will start to go bad.

Make homemade crust. I like prepared crust just because I am not a fan of rolling out dough, but you can use your favorite pie crust recipe! A butter pie crust would be the closest to the store bought ones, but you could also make a graham cracker crust if you wanted a no bake pie.

Top with your favorite toppings. I love adding a scoop of vanilla ice cream or cool whip on top to make this pie even more special.

Ingredients

  • 1 9 inch frozen pie crust
  • 1.5 lbs fresh strawberries hulled
  • 1 cup granulated sugar
  • 3 tablespoon cornstarch
  • ¾ cup water

Instructions

  • Preheat the oven to 350℉.
  • Bake the pie crust in the preheated oven for 12-15 minutes, or until golden brown. Remove and allow to cool.
  • Place half of the strawberries into the cooled, baked pie crust.
  • Cut the remaining strawberries into quarters. Add the quartered strawberries and sugar into a medium saucepan, and cook over medium heat. Once the sugar has melted, bring to a boil.
  • Meanwhile, in a small bowl, mix together the cornstarch and water. Pour into the boiling strawberry mixture and bring to a simmer. Simmer for around 1 minute.
  • Pour the hot strawberry mixture into the pie. Refrigerate for at least 3 hours before cutting into slices.
