Happy Friday all!! We made it!
I am writing this to you the morning before I am to leave for Vancouver, just trying to put off giving the place a good clean.
You see, putting off cleaning is one of my strong suits. At least I’m doing something productive, right?
This year, we are only going to be in Vancouver for 2 weeks. Which means we aren’t too concerned about eating everything in our fridge, but we are trying our best.
This morning, all we have to eat is the carrot cake I made for John’s birthday, some cheese and some bread.
And here I am making more food for us. But at least I can use this coconut butter on the bread.
AND scooped directly into my mouth, aka: the best way to enjoy coconut butter.
What do you need to make Coconut Butter?
All you need to make coconut butter is ONE INGREDIENT. Yup, you heard that right. ONE!
- unsweetened shredded coconut
Can I even call it a recipe if it only consists of one ingredient?
Meh, I’m going to say yes, because I never knew how that I could actually MAKE coconut butter at home until I read I Quit Sugar, so yeah, I think it needs to be spelled out for others out there.
This recipe is stupid simple, and is ready in less time than it takes to go to the grocery store and buy it.
AND it is wayy cheaper than coconut butter. On Amazon.com, a jar of coconut butter runs for around $13. In comparison, the amount of shredded coconut I used might be around $5 MAX.
I also find it very hard to find this butter around where I live. So this fact along with the hefty cost of a jar of coconut butter lead me to make it myself. And I hope you try it too!

Coconut Butter
Ingredients
- unsweetened shredded coconut (the more the better)
Instructions
- In a food processor, pulse the unsweetened shredded coconut until smooth. This will take around 10 minutes. There will be a point where the mixture will look like a ball rolling around and that is perfectly normal. Just wait longer until it is of a spreadable consistency.
- Store in an airtight container.
Notes
- You can replace the unsweetened shredded coconut for sweetened coconut if you want a sweet spread.
