So this week has been crazy.
Something a teacher wouldn’t really say now that it’s summer. It should be time for relaxing and soaking in the sun. But when you are also a food blogger… you might thing that it is just making food and taking quick snaps before you dig in.
But it is so much more than that. Especially when you just redesigned your website.
So yeah. I just moved my site from one platform to another. All by myself. With basically zero tech skills to speak of.
What happened? Well, almost NONE of my pages worked. A lot of my links pointed to pages that now don’t exist. 404 errors galore. And don’t get me started on the posts that I need to reformat.
Right now I am regretting not hiring someone to do this for me, but at the same time feeling kind of empowered at getting this far and not completely screwing everything up.
*knock on wood*
The thing is, when I’m stressed, I snack. And when I snack, I usually grab the closest thing to me. Which is either potato chips or crackers. One being healthier than the other, but still. I always end up finishing the packet, and start scavenging for more. Lately the “more” is my Cashew Mini Nutella Cups.
Since I knew this whole project would be stressful, I preemptively made these healthy gummy bears. Because having a snack where I won’t be guilty if I eat it all is what I need in times of stress.
And in times of non stress. I mean, I really do love snacking.
Who knew making your own gummy bears was so easy? Did you? Someone should have told me! All those years of buying gummy bears laden with sugar and junk I can’t even pronounce. I could have been making these: which are healthy enough to eat for breakfast!
You only need 4 ingredients to make this Grape Fruit Juice Gummy Bears recipe. FOUR!! And I can pronounce them all thank you very much.
So if you don’t have a gummy bear mold, do yourself a favour and buy one! I bought this one, which comes with a eye dropper kind of thing so that you can easily fill the mold. But I am sure if you own a silicone ice cube tray, that would work perfectly for larger gummies.
Whatever you use, you need to try this this summer. If you have kids, let them help fill the molds. It is a treat that they will enjoy making almost as much as they will enjoy eating them.

Grape Fruit Juice Gummy Bears
Ingredients
- 1 cup grape juice (either red or white)
- 1 Tbsp lemon juice
- 1/2 tsp stevia
- 3 Tbsp gelatin
Instructions
- Bring the juice to a boil. Remove from heat and add the lemon juice and stevia.
- Gradually whisk in the gelatin until fully combined.
- Fill gummy bear molds with the mixture, and transfer to the fridge to harden, around 2 hours.
- Transfer to an airtight container and store in the fridge.
Notes
- You can switch out the juice for your favourite juice.
