It’s the last day of classes today!!
I tell you, having classes that only last for 3 weeks sounds good on paper, but actually doing them? Wowza, they sure pack a whole course into such a short amount of time.
So this post is going to be short and sweet, so I can celebrate never having to take an exam in my LIFE. That’s right! I graduate in May! Right after my practicum.
So to start off my day, I made one of the quickest and easiest recipes ever. So enjoy! I’ll be doing more complicated recipes later, I promise.
This Toasted Almond Granola is a quick and easy recipe to make as a topping for your favourite yogurt. Vegan and gluten free, this is a great breakfast idea
- 2 cups oats
- 1/2 cup sliced almonds
- 2 Tbsp salted butter
- 1 Tbsp honey
- 2 Tbsp brown sugar
- 1/2 tsp vanilla extract
Place the oats and almonds on a cookie sheet and broil for 1 minute. Turn off the oven.
Melt the butter in a large skillet on medium heat. Add in the honey, brown sugar and vanilla, and stir in for around 1-2 minutes. Add in the oat mixture and stir in until the oats are coated.
Return to the cookie sheet and leave in the warm oven for around 15 minutes.
