It’s another protein powder recipe y’all!
I have been on a mission to use up my protein powder. Not because I don’t like it, it is just that it doesn’t mix well in liquid, so it gives me the excuse to make delicious snacks with it.
And as you can see from my blog, I am all about making sweet snacks.
Anyways, this morning I went to the first spin class in like.. a couple of years. Since I have recently been going to the gym in the mornings pretty consistently these past few weeks, I thought I would be fine.
Yikes. Was I wrong. After about 10 minutes I felt like I was dying. Who knew that staying in one spot could cause that much physical exertion?
The only thing getting me through that early morning class was the promise of these protein balls.
I have got to admit, I am extremely obsessed with peanut butter. I have been eating a couple of tablespoons of peanut butter straight from the jar every day this week. And that is not even an exaggeration. I think I will need to buy more peanut butter this weekend because I am almost out!
So this is my alternative to dirtying all my spoons with peanut butter, throwing the spoons in the sink after a mouthful telling myself that is the last spoonful.
These protein balls are gluten free, refined sugar free and vegan. While I still can’t bring them to my school due to the peanut butter, I can snack happy. And these are only made with 4 ingredients!!
This takes less than 10 minutes to make, so you really have no excuse. What are you waiting for??
No bake peanut butter protein balls. Made with vanilla whey protein powder, they are vegan, gluten free and made with no refined sugar.
- 1/2 cup peanut butter
- 1/4 cup pure maple syrup
- 1/2 cup vanilla whey protein powder
- 3 Tbsp coconut flour
In a microwave safe bowl, heat the peanut butter and maple syrup in two 30 second intervals, mixing after each interval until smooth.
Mix in the protein powder and coconut flour until fully combined.
Form into 16 balls, and store in an airtight container in the fridge.
