Rye Apple Pancakes

For all those girls who say that their dream guy is smart and nice, I suggest that you major in math. You will be surrounded by them, and the proportion of girls to guys is always at least 1:5. But the untold side effect of majoring in this subject that really has no real world applications is that we are all crazy. I think that by the time I graduate I will look and act like the Mad Hatter. It's no wonder Lewis Carrol was a mathematician.

That being said, it is also very easy to get scholarships as you are probably going to be the only girl in most of your classes. To my delight, I just won a scholarship for "Women in Math" worth $1000. It's funny, because I was reading the rules and regulations and apparently this scholarship has been awarded to men. Maybe that one guy was the only one who applied.

And so, because I got such a sweet deal, I thought I would make a nice breakfast of pancakes. Sadly, I am not too keen on rye flour, but I wanted to experiment.

The pros of these pancakes is that they keep you full for a very long time. The cons are, well, I don't really like rye flour..

What you'll need:

-1 cup rye flour
-1 cup whole wheat flour
-1 tablespoon white sugar
-1 teaspoon baking powder
-1 1/2 tablespoon butter, melted
-1 cup milk
-1 egg
-1 apple, peeled and cored


    1.   Combine flours, sugar and baking powder in a large bowl.
    2.   In a medium bowl, combine the butter, milk and egg. Mix well.
    3.   Grate the apple using the large holes of a box grater, then add it into the milk mixture.
    4.   Slowly pour in the wet ingredients into the dry ingredients. Mix with a spatula until fully incorporated.
    5.   Heat a large skillet over medium heat and spray with cooking spray. Scoop 1/4 cup batter for each pancake, and flip when bubbles are covering the surface of the pancake. Flip and cook the other side until it is golden.

  8. Great news on the scholarship! Congrats. And there are actually quite a few jobs where your math skills will be much in demand - it's really a highly marketable degree. Anyway, no need to market these pancakes to me! They look wonderful. I don't believe I've ever had rye pancakes before, and we do have some rye flour on hand. Hmm, sounds like I should make these, yes? Yes!

  12. congratulations on your scholarship! never tried rye flour too before but have bought a packet and now sitting in the fridge. I was thinking to make rye bread ..not sure yet. So i guess since they keep us full for a long time, it's good for dieting then :D
