Strawberry-Lime Parfait

Strawberry-Lime Parfait

Now this was a fun midnight snack. I'm always making stuff at and/or around midnight. Can't sleep ever. But it's all good, because it turns out I am more creative at night. Sometimes I write down my ideas that I come up with at midnight, and they turns out amazing.

But since I don't want to spend the WHOLE night awake, I make very simple, 5 minute AT THE MOST snacks. I've got to say, I'm thankful that at least I didn't reach for the ice cream. I'm always reaching for the ice cream at night..

This is my attempt on using up the cereal in my house. See, they are having this deal with the cereals where if you buy the cereal (around $3.50), you get a pass for a free movie of your choice at the theaters(around $12.99 value).

Needless to say, there are LOTS of cereals here just sitting around, waiting to be eaten, so I'm trying to find fun and interesting ways to use them up. Any suggestions would be very much appreciated. Except for "eat it in a bowl with milk". Don't worry, I've thought of that one already ;)

What you'll need:

-1/2 cup vanilla yogurt
-juice of 1/2 lime
-3 strawberries, sliced
-2 tablespoons cereal (I used fiber one honey clusters)

Directions:

    1.   In a cup (or wine glass ;p), mix together the yogurt and the lime juice. Fold in the strawberries. Top with cereal and enjoy!

  1. Cereal or granola at night is always one of the best desserts I go to when I'm out of anything else or when I'm trying to be good. ;)

  9. Cornflakes, crushed, make a good crunchy topping for mac and cheese. I actually prefer cereal with just fruit and milk but your parfait looks delicious.

Thanks for stopping by my blog!

    Best,
