Oatmeal Whoopie Pies

So in honor of pi day (no no, I did mean pi as in 3.14159265.. Since today is March 14th --> 3/14. Yup, people celebrate days like today) I made these pies. Well, not pies in the conventional form. Pies as in Whoopie Pies. Never made these before so bear with me.

I just had a really nice looking strawberry, these is nothing strawberry in these "pies". But I do love strawberries. I haven't had a strawberry in so long. I don't know why. So I was just having fun with them today.

Anyhow, I had a lot of oatmeal on hand. I then realized that I haven't made anything with oatmeal in a long time. And I love oatmeal, so this was really weird for me. So I killed two birds with one stone. Got to celebrate pi day, and make something with oatmeal. And play around with strawberries. Today was a good day!

What you'll need:

For the cookie:
-1 3/4 cups packed brown sugar
-3/4 cup butter
-1/2 teaspoon salt
-1 teaspoon baking powder
-1 teaspoon baking soda
-3 tablespoons boiling water
-2 1/2 cups all purpose flour
-2 cups quick cooking oats

For the filling:
-1 egg white
-2 tablespoons milk 
-1 teaspoon vanilla
-2 cups confectioners' sugar
-3/4 cup margarine


    1.   Preheat the oven to 350˚F. Lightly spray baking sheets with cooking spray.
    2.   Cream butter and sugar until light and fluffy. Beat in the eggs. Add the salt, baking powder, baking soda, boiling water and flour and mix until fully incorporated. Stir in the oats.
    3.   Drop the dough by tablespoonful on the baking sheets and bake for 10 minutes. Let cookies stand on a wire rack.
    4.   For the filling: Beat the egg whites, milk and vanilla. Slowly add the margarine and the confectioners' sugar, and beat until light and fluffy. Put in the freezer for 1 hour and make your cookies into sandwiches!
